I am interested in 3d graphics and lately have heard the term "voxel" a few
times.  What exactly is a voxel?

A voxel is the 3-dimensional equivalent of a "pixel".  Just as pixel is
short for "picture element", voxel is short for either "volume element" (no
X there, though) or "volume pixel."
