I understand how the double helix of DNA takes shape, but
why does there need to be two strands when only one of the strands is the
coding for transcription?

Ask yourself two questions: what would happen to a single stranded DNA if
it broke verse a single strand break in a double stranded molecule and
also how would a single stranded molecule know how to fix a base deletion
or replacement...???
